Mexican Potato Bake

 I find as I get older the Christmas season seems to get shorter and shorter. I seem to get preoccupied by studying, exams, work, shopping etc. I'm sure it happens to all of us. So for the next few weeks I'm going to try my best to enjoy the season, doing things I love and spending time with the people I love.

Of course one of my favorite things to do is cook. I especially love whipping up quick recipes using random ingredients in my kitchen. I purged pretty much everything out my kitchen last week in a impromptu cleaning session, so my options were slim.

But actually one has many options if they have potatoes, beans and cheese on hand. I fancy a good casserole. I've never been a big meat, potatoes and vegetable separate kind of girl. I've always loved everything mixed together. It's more fun that way.

This bake is very basic and super cheap to make. If Christmas shopping has cleaned out your wallet this will be your saving grace.

This dish is perfect by itself by it's wonderful with tortilla chips. Say hello to my lunch for the past four days. Hasn't gotten old yet :D

Mexican Potato Bake 
HTIC Original

2 Russet potatoes, peeled and cubed
1/4 onion, diced
2 cloves garlic, minced
3/4 cup spinach, fresh or frozen
1/2 cup mushroom, chopped
1/2 cup black beans
1 can diced tomatoes
2 t. chili powder
2 t. cumin
1 cup shredded sharp cheddar

1. Bring a large pot of water to a boil. Add 1 t. chili powder and 1 t. cumin. Add potato and cook for 15 minutes. Drain water and set aside.
2. Heat a small amount of oil in a large skillet over medium heat. Add onion and garlic and cook until soft. Add mushroom and spinach and cook until spinach has softened.
3. Preheat oven to 350. Layer half of the potatoes in a 8x8 glass pan. Top with half of black beans, then spinach/mushroom mixture, half the tomato and half the cheese. Sprinkle with 1/2 t. chili powder and 1/2 t. cumin. Repeat layers and finish with last of spices.
4. Bake for 25 minutes until cheese has melted and browned slightly. Allow to cool slightly and enjoy!
