This weekend at work I was lucky enough to eat a really good doughnut. Doughnuts are one of those foods you just expect to taste good because, well it's a doughnut, how could it not? But we all know it's very easy to have a bad doughnut, but yet we eat them anyways.
The doughnut in question was simple enough. Just a cinnamon spiced cake with a basic glaze, but it was absolutely delightful. Pillowy is how I described it to my dad. I knew as soon as I ate it, I had to make some doughnuts at home as soon as possible.
So the next day, like any sensible person, I went out and bought a doughnut pan. Making doughnuts could seriously not be any easier. Like a lot of baked goods make sure you don't over mix and you're golden.
Of course these baked doughnuts aren't going to be the same as their fried counterparts, but they are delicious in their own right. If you're craving a doughnut and don't want to bust the button on your jeans these are perfect.
My favorite doughnut is cinnamon sugar which is how I dressed mine. But you can really use any topping you'd like. I'm excited for making hundreds of different variations in the months to come. Any one who wants to taste test, just let me know!
Baked Cinnamon Sugar Doughnuts
From Wiltons Package
2 cups cake flour
3/4 cup sugar
2 t. baking powder
1/4 t. nutmeg
1 t. salt
3/4 cup buttermilk
2 eggs, lightly beaten
2 T. butter, melted
1. Preheat oven to 425. Sift together dry ingredients in a medium bowl. Whisk together eggs and buttermilk and add to dry ingredients. Mix until just combined.
2. Spray doughnut pan with cooking spray. Fill molds 2/3 way full. Cook for 7-9 minutes. Cool for 4-5 minutes.
Cinnamon Sugar Topping
1/4 cup sugar
1/8 cup cinnamon
2 T. butter, melted.
1. Put melted butter in a bowl. Mix sugar and cinnamon in a plastic bag.
2. Dip doughnuts in butter and put in bag with cinnamon and sugar. Shake until coated. Remove from bag and press into cinnamon and sugar a second time. Serve warm. Enjoy :D
