Fresh Corn and Tomato Scramble

I am always looking for new and exciting foods to eat for breakfast. It is after all my favorite meal of the day.

Lately with the mountain of produce I've been getting each week, its a breeze to make a variety of scrambles and omelets. I love eggs and have finally learned how to cook them properly. A few years ago that certainly wasn't the case. Back then I was still cooking my scrambled eggs in the microwave and forgetting to spray the pan every time I made eggs over easy.

But now I can churn out a pretty mean egg, including this one. There are few things that are better in the summer than fresh corn and tomatoes. The past few weeks I've been a total idiot and forgetting to use my corn. So many ears have been thrown away because they've dried and shriveled up. Not this week though!


I paired delicious summer corn with garlic, green pepper and feta. After a quick cook, the scramble was accessorized with beautiful juicy tomatoes.

Mmmmmm...this flavor combination is stellar. The sweet corn compliments the salt feta and tart tomatoes. It only get betters when paired with chocolate zucchini bread and fresh cherries.

Yeah, I know you're jealous. But you can make it yourself in a jiff! I guarantee it will be better than that McDonald's or Nutrigrain bar.

Fresh Corn and Tomato Scramble
HTIC Original

1 ear of corn, cut off cob
1 tomato, diced
1/2 green pepper, diced
1 garlic clove, minced
2 T. feta
1 egg
1 egg white
salt and pepper

1. Heat oil in a pan over medium heat. Add garlic and cook for 2-3 minutes. Add green pepper and cook until garlic and pepper are slightly browned and fragrant.
2. Add corn and cook for 1-2 minutes. Whisk egg and egg white in a small bowl and pour over vegetable mixture. Keep the eggs moving with a wooden spoon, making sure to scrape the bottom of the pan to prevent crust from forming.
3. Add feta and stir a few times. Cover pan, remove from heat and let sit for 2-3 minutes. Top with tomatoes and salt and pepper. Enjoy!
