Chocolate Peanut Banana Bread

Who doesn't love a good quick bread?

They have all the charms of a muffin, require no dough raising and can be spread with delicious toppings or even made into a sandwich.

Yesterday Joanne from Eats Well With Others shared how she dealt with her roommates banana amnesia. I'm sorry to say I myself suffer from banana amnesia. If I'm not careful, my beautiful bananas turn to black mush and are inedible.

Insert a quick bread. It can solve nearly anything.

And nothing is better in a quick bread (or a lot of things for that matter) than chocolate chips. Take a simple ho hum banana bread recipe, throw in a handful of chocolate chips and ta dah! You have magic on your hands.

If magic isn't enough for you toss in some peanuts with the chocolate chips. Its like a peanut butter cup stumbled into banana bread batter.

And added bonus, you can make this bread with applesauce and its still delightful.

Chocolate Peanut Banana Bread
Adapted from 

1 cup sugar
1/2 cup unsweetened applesauce
3 bananas mashed
2 large eggs
2 t. vanilla extract
2 cups AP flour
1.5 t. baking powder
1 t. baking soda
0.5 t. salt
1 cup chocolate chips
1 cup peanuts

1. Preheat oven to 325. Mix together applesauce, sugar, bananas, eggs and vanilla extract.
2. Whisk together dry ingredients through salt. Add to wet ingredients in three additions. Mix until smooth. Fold in chocolate chips and peanuts.
3. Grease loaf pan and pour in batter. Bake for 60 minutes. Allow to cool before slicing. Enjoy!
