I haven't done a 3 ingredient post in a very long time but I figure that needs to change! I know I'm about to go back to school and start working two jobs so my time for cooking is going to be limited. I'm sure a lot of you can empathize. It's easy to say you have no time to cook when its a 20+ ingredient recipe akin to building the Empire State Building in one day. But when there's only three ingredients, I don't want to hear complaining from anyone.

For this particular recipe I had a problem that needed addressing. This week in my CSA I got a cantaloupe that was bigger than my head. Strange things must be happening at Burgefield Farms because their produce is huge! This gargantuan melon may not have been a problem only...
I don't like cantaloupe.
I know shocker! Another food Adrienne doesn't like. There's popcorn, shortbread cookies, meat in general. I swear I'm not that picky! Melon and I have just never been BFF. We're the friends that only hang out once a year but even then we don't really enjoy each others company. It's a mutual thing. I promise melon doesn't mind.
But I wasn't about to throw away this giant melon without giving it a serious second chance. So I hacked up the monstrous thing, put it in two zip lock bags and shoved it in the freezer. This way I had some time to think about what in the hell I was going to do with it.
My first idea was a smoothie. A lot of websites suggest throwing cantaloupe and yogurt together in a blender. Sounded good to me, so I added a few strawberries into the mix and a touch of honey to sweeten things up a bit since I was using plain yogurt.
The result was a tart extremely refreshing drink that paired wonderfully with my Blue Oven Bread Sweet Wheat toast with peanut butter a little honey and fresh cherries. These are the kinds of breakfasts I can get used to :D
Do you all have any ideas for how to use cantaloupe? I will accept any and all suggestions!
Cantaloupe Strawberry Smoothies
HTIC Original (although not that original)
2 handfuls of chopped and frozen cantaloupe
5-6 strawberries, hulled
0.5 cup yogurt of your choice
1. Combine all ingredients and blend until smooth. Drizzle with honey if desired.
