I've been a vegetarian for over a year now (wow! I can't believe it) and in that time I haven't eaten a single marshmallow. This makes me a little sad because honestly who doesn't like marshmallows? But lucky for me the world is becoming more accepting of vegetarians and vegan marshmallows and marshmallow creme are readily available at your local Whole Foods.
So insert Ricemallow, a pretty delicious gluten free and vegan alternative to the traditional marshmallow fluff. Add in some of the best graham crackers I have ever tasted and we have the makings of a pretty tasty snack.
I originally intended the graham Ricemallow sammies to be dunked in Nutella, because honestly my shoe dipped in Nutella would taste wonderful. The heating was going along great until I decided to do something incredibly, incredibly stupid. Have you ever done something that you know would end in disaster but you do it anyways just on that 0.0001% chance it will be alright? This is other wise known as Adrienne dumping cold milk in hot Nutella.
I'm sure most of you know how this turned out, but for those of you who don't, I instantly turned my shiny Nutella into a curdled disaster. Into the garbage the Nutella went and I had to find a Plan B. Plan B featured me scrounging up every chocolate source in the apartment (two half bags of chocolate chips and half of an Easter bunny) and melting them in a poor woman's double broiler.
I'm pretty sure I burned myself 3-4 times on the steam, but my chocolate melted beautifully without any curdling.
After a quick dress in melted chocolate into the fridge my smore bites went. My stomach growled eagerly while I waited for them to cool. After about 30 minutes, I was chomping at the bit to give them a try.
In the words of my roommate "oh my sweet God." Yes, these smore bites are everything their campfire cousins are and more. They retain the overwhelming chocolate factor found in the melted campfire version. They are also just as messy and leave chocolate smears on the mouth and fingers. They might not be as easy to make as their campfire cousins, but they will undoubtedly hit the spot when a smore craving hits between the months of October and May.
Smore Bites
30-36 Trader Joe Graham Crackers (or 15-18 whole Graham Crackers halves)
1 tub Ricemallow or Marshmallow Fluff (you won't use the whole tub)
16-20 oz. chocolate chips
1. Spread about 1 t. of Ricemallow or Fluff on one graham cracker. Top with second graham cracker.
2. Put a piece of wax paper on a cookie sheet.
3. Using a double boiler, or bowl over small sauce pan, bring water to boil and then reduce to medium. Put chocolate in bowl and stir until smooth.
4. Dip half of graham cracker sammies in chocolate lengthwise. Place on cookie sheet.
5. Put cookie sheet in fridge until chocolate sets. Enjoy!
