Chili and Covers

So a few days ago was a rather nasty day weather wise but perfect for satisfying an insatiable craving I've had for the past few weeks. Since turning vegetarian I haven't missed meat too much, but the meat I do crave occasionally are things that I didn't even eat that often such as the star of this post: Cincinnati chili.
I have a theory that Cincinnati chili is something that you have to be raised on to appreciate. New converts are rare and those exposed past diapers find it extremely off-putting. But for us Cincinnatians there is nothing like it. And I'm just talking about Skyline here...I won't even mention those other guys.
So on this rainy Monday afternoon I pulled my pans out of the cupboard and set to work. The recipe was insultingly easy and only left a few dishes, right up my alley! Combine all the ingredients in a pot, bring to boil then simmer for 1.5 hours.

Let me quickly put in a plug for Quorn products. I used their beef-style grounds and I challenge any meat eater to tell the difference between actual meat and these wonders in my chili. Quorn is great because its soy free, protein rich and pretty high in fiber (5 grams). Its a little pricey, but for the occasional treat it is well worth it.
So how did it turn out? I was pretty damn well pleased with my imitation. I grated a bit of sharp cheddar on top and tucked oyster crackers into each bite. It made for a delightful supper. Finally, my craving has been satisfied.
Chili Recipe: ignore the nonsense about cooking onions and browning the meat. Nix the onion and just throw everything together
